Traditional Ukrainian recipes are passed from generation to generation. As a rule, every Ukrainian lady has her own cooking secrets she has got from her mother and grandmother, which make her dishes particularly delicious.
The first and the main rule is to cook with love, sincerely wishing all the best to guests. Secondly, in order to cook proper Ukrainian recipes it is important to have a complete list of products needed, that is way it is always better to prepare food in line with the season as, for instance, it could be costly to use fresh vegetables in winter.
Let’s try to cook some traditional Ukrainians recipes today!
Invite your friends and surprise them with Ukrainian borsch, deruny and syrnyky.
Before getting started cooking Ukrainian borsch make sure you have the following products: potatoes, carrots, cabbage, onion, beets, tomato or tomato sauce, garlic, bay leaf, dry or fresh beans, dill, parsley, salt, paper and sour cream.
Nowadays the usage of meat is perhaps optional, but if you are not vegetarian and don’t keep the fast, you can firstly cut half a kilo of beef or pork into pieces, put into pot and fill with 2-3 glasses of water. Boil and skim of fat on the surface, add some beans, salt, bay leaf, parsley root, and leave it boiling on small fire.
Peel the vegetables; grate 2-3 beets, place them into a frying pan and fry on the sunflower oil. Please, be exceptionally careful with beets as they are the main ingredient of the borsch.
Chop 3-4 potatoes and one big carrot, and add them to the boiling water. You can also add a whole onion: very soon all its taste will be boiled down into borsch and you can throw the onion away.
Next step is to cut a cabbage into small pieces and place it into the boiling water; in 10-15 minutes add tomato sauce and dill.
Finally, when you will see that all the vegetables are cooked and the meat is ready, add fried beets into the pot, but don’t boil them. Otherwise the borsch will be deprived of this bright red color.
Before serving borsch add a table spoon of fresh sour cream.
Deruny (potato pancakes)
The next one of Ukrainian recipes is deruny, or potato pancakes.
Take a kilo of potatoes and one large onion, peel and grate them (however, not very finely); add some salt, pepper, 2 big eggs, pressed garlic and a cup of flour. Give a mixture a good stir.
Heat some sunflower oil in a frying pan, take a mixture with a table spoon and form small flat pancakes, fry them until they turn brown and then turn on the other side.
You can serve ready deryny with mushroom sauce, cracklings, cheese, and of course, sour cream.
Syrnyky (cheese pancakes)
The last one of Ukrainian recipes for today is syrnyky (cheese pancakes) – delicious and easy to make dessert.
You will need half a kilo of cottage cheese, 2 cups of flour, 2-e eggs (depends on size), some sugar and salt, and 100 gr. of raisins.
Gently mix all ingredients; place small pancakes (make them with your hands in flour) into a frying pan with hot sunflower oil. Fry syrnyky until they are golden colored on both sides.
Serve with sour cream.
